The curry plant is an intensely aromatic herb used to flavour meat dishes, drinks and jellies. It is an effective insect repellent. Essential oil from the curry plant is used in cosmetics and for treating respiratory problems.

The curry plant prefers poor soil in a sunny, well-drained postion. Plants can be divided in spring, or cuttings can be taken from side shoots in summer. Never cut into old wood.

 
Potato Salad with Curry Plant Mayonnaise

Ingredients:
2 pounds small new potatoes, in skins
1¼ cups commercial mayonnaise
6 curry plant leaves, roughly chopped
black pepper, cracked

Method:
Place the small new potatoes (skins on) in a pan of salted boiling water and cook for 12 minutes, or until just tender. Drain and allow to cool slightly.

Mix the mayonnaise with the roughly chopped curry plant leaves and cracked black pepper. Stir this mixture into the potatoes while they are still warm. Leave to cool, then serve on a bed of mixed lettuce or other assorted salad leaves.
