| Ingredients
2 Granny Smith apples
1 small rockmelon
½ large pineapple
½ pawpaw
1 mango
2 large bananas
70g dried dates (pitted)
50g oil
small piece fresh ginger, finely
grated
1½ tablespoons curry powder
4 spring onions, chopped
2 tablespoons lemon juice
50g cashews, toasted
Plain yoghurt to garnish (optional)

Method
Peel all the fruits and cut into
bite-size pieces. Roughly chop the pitted dates.
Heat the oil in a heavy-based pan.
Gently cook the ginger, curry powder and spring onion for 3 minutes. Add
the fruit and gently toss in the mixture.
Cook gently for approximately 3
minutes, making sure that the fruit does not soften too much. Add the lemon
juice.
Serve with steamed rice, and garnish
with toasted cashews and plain yoghurt.
