Patsy's Breakfast Bake


Ingredients

8 eggs
2½ cups milk
3 cups buttered bread, cubed
1 tsp dry mustard
white pepper
2 lb sausage (*see note)
8 oz cheddar cheese, grated
8 fresh mushrooms, sliced

Method

Brown the sausages in a fry pan, drain on absorbent kitchen paper, and set aside.

In a large bowl, beat the eggs and add the mustard, milk, white pepper and buttered bread cubes. Allow to rest for a few minutes so that the bread soaks up the egg mixture. Stir in  80% of the grated cheese.

Arrange the browned sausages in a Pyrex dish and pour the egg mixture over the top. Slice the fresh mushrooms and arrange over the top of the dish. Sprinkle the remaining grated cheese over the top. Cook for 40 minutes at 350º F.

*Notes
For the sausage, try Spanish chorizo, English Cumberland sausage, or American pork whole-hog sausage.
