Marva's Pink Rice Salad


Ingredients

2 cups boiled rice
5 medium beets
10 crab sticks, cut into squares (optional)
3 cups chopped lettuce
½ cup chopped parsley
1 cup corn
1 onion, chopped
3 tblsp mayonaise
lemon juice
salt

 

Method

Cook the rice and allow to cool.

Boil the beets, clean and cut into chunks. In a large bowl, combine the rice, beets, crab stick pieces, lettuce, chopped parsley, corn and chopped onion. Add the mayonaise, lemon juice and salt, and mix well. Store in the 'fridge for an hour before serving.

 

Marva  lives in the beautiful island of Cyprus, known as "the island of Aphrodite". A Greek-Cypriot, Marva was born in Famagusta, which used to be called the "Paris of the Mediterrean" because of its long sandy beaches and crystal-clear waters. She now lives in Larnaca, a one-hour drive from her home town.

Marva enjoys travelling, cooking, interior decorating and shopping! Her biggest love is her dog, Greco. She has studied Business Administration, and is currently a part-time college student (Interior Decorating). She holds the position of Sales Manager within the family indoor/outdoor lighting business.
