Method
Trim the pork and put through a meat grinder/mincer. Cut
the brown bread into strips, prepare the vegetables, and put all this through
the meat grinder/mincer. Beat the eggs and add to the meat mixture, together
with the tomato paste, soy sauce, honey, ginger, garlic, salt, pepper,
cumin and coriander. Mix well.
Lightly grease 2 Pyrex loaf dishes. Divide the meat mixture
into two equal portions and press firmly into the pans. Wrap with several
layers of microwave-safe clear plastic wrap (e.g. Cling Wrap or Glad Wrap)
and cook in the microwave on Medium-High for 18 minutes. Allow to sit,
covered, for 10 minutes (still covered with the plastic wrap) before turning
out onto a platter and serving with a crisp salad or steamed green vegetables.
Left-overs can be frozen and re-heated another time, or
eaten cold next day.
This dish can be baked (wrapped in foil) in a hot oven
for 25 minutes.
