Red Wine Marinade


Ingredients

¾ cup red wine
2 tblsp lemon juice
1 onion, sliced
1 carrot, thinly sliced
1 celery stalk, chopped
1 sprig fresh parsley, roughly chopped
½ tsp dried thyme
1 bay leaf
6 whole black peppercorns, crushed
2 tblsp olive oil

 

Method

Mix all the ingredients together and leave to stand for 1 hour before using.

*Add the olive oil only if the marinade is to be used for lean meat, such as chicken, turkey or venison.

*White wine may be substituted for red to marinate veal, pork, poultry or fish.
