large pork fillet

tblsp olive oil

can mango slices

tomato paste

tblsp honey

tblsp soy sauce

spring onion, finely chopped

large tomatoes, de-seeded and chopped

Method
Trim
the pork fillet and cut into thick medallions. Heat the olive oil in a
non-stick fry pan and brown the pork medallions. Remove from the heat and
place the pork in a microwave-safe casserole dish.
Place
the mango and ½ the syrup from the tin into a food processor together
with the tomato paste, honey and soy sauce. Process until smooth and creamy.
Add extra syrup, if required.
De-seed
and chop the tomatoes, and finely chop the spring onion. Combine with the
tomato paste mixture and pour over the pork medallions. Cook in the microwave
oven on High for 8 minutes, then on Medium-Low for 15 minutes (or, until
the pork is thoroughly cooked).
Serve
with slices of mango or banana, and thick-cut carrot sticks that have been
simmered in boiling water with a tablespoon of honey.
